Carrot Pineapple Raisin Salad

This carrot and pineapple salad is sweet and creamy. It’s the perfect way to get your charges interested in different ways to eat their fruit and veggies!  Plus, it is a simple recipe and easy enough for your charges to help you make!

Makes 4 servings, about ¼ cup each

Ingredients:

  • 1 cup shredded carrots (about 3 medium carrots)
  • ¼ cup crushed pineapple, lightly drained
  • ¼ cup plain Greek yogurt
  • 1-2 tablespoons honey
  • ½ cup raisins

Directions:

  1. Combine all ingredients in a medium bowl and mix well.
  2. Refrigerate until ready to serve.
