St. Patty's Day Recipe: Healthy, Fun Avocado and Orange Mousse

Got an adventurous kid around? This orange avocado mousse is a fun way to explore different flavors and textures with a splash of green color for St. Patrick’s Day, which in case you haven’t noticed is today. The avocado makes it creamy, the orange makes it sweet, ice makes it cold, and blending it creates a light and fluffy texture.
Makes 2 servings.
1 medium avocado Juice from ½ of a fresh orange, divided ¼ cup ice
- Cut the avocado in half and scoop the flesh into food processor or blender.
- Add 2 tablespoons of orange juice and ice and blend until it comes together in a mousse-like texture. If it’s too thick, add the rest of the orange juice.
Try it another way: adding more orange juice will turn this recipe into a fun green smoothie!
